Slow Roasted Tenderloin with Garlic Herb Butter

Preheat oven to 450°F.

Remove meat from refrigerator and let sit out at room temperature for 30 minutes. Coat roast with olive oil. Season roast with salt and pepper to taste.

Place roast in roasting pan and place in oven. After 15 minutes, turn temperature down to 300°. Roast will take approximately 30 to 40 minutes to reach medium rare (130° internal temperature).

While roast is cooking, prepare garlic herb butter by placing all ingredients in mixing bowl and mix thoroughly. Set aside at room temperature.

When roast is done, remove from oven and let rest for 10 to 15 minutes before slicing.

Butter can be spread over entire roast or a small amount can be placed on top of sliced roast and allowed to melt.

Olive oil, as needed
Kosher salt and pepper, to taste
Garlic Herb Butter:
2 sticks unsalted butter, softened
4 garlic cloves, finely minced
1 tablespoon fresh oregano, roughly chopped
1 tablespoon fresh rosemary, roughly chopped
1 tablespoon fresh chives, roughly chopped
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
