Upper 2/3 Graded Choice by the USDA
Every piece of beef is evaluated by the USDA and awarded shields and labels as such. This system assures consumers the products they buy have gone through a rigorous review process by highly skilled graders and auditors who follow the official grade and process standards developed, maintained and interpreted by USDA’s Agricultural Marketing Service1.
HIGH QUALITY GUARANTEED
Sterling Silver only uses the top ⅔ of all meat graded Choice using these parameters. Choice beef is high quality, tender, juicy and flavorful so you know you’ll get premium quality in every bite.

Superior Marbling
Marbling is the small, white lines of fat interlaced in the muscle fibers of beef. When beef is cooked to the proper temperature, this fat melts into the meat and produces flavorful, perfectly textured beef.
GRASS VS. GRAIN
While grass-fed cattle have a certain quality reputation throughout the industry, grain-fed cows are more readily able to produce consistent, rich marbling. That’s why Sterling Silver selects cattle that are grain-fed and only produce marbling that is moderate, slightly abundant or moderately abundant. It is important to note that while the USDA values marbling, it is never at the cost of animal welfare. This is an important distinction we also uphold at Sterling Silver.
Aged a minimum of 21 days
Aging is what we do to give meat time to develop a more flavorful profile. It is the process by which beef is stored at specific temperatures allowing microbes and enzymes in the meat to break down muscle tissue, making it more tender.
All Sterling Silver cuts are aged a minimum of 21 days* to ensure the meat has had enough time to bring you a consistent, delicious product that you can proudly serve your guests.
